Weekly Recipe: Penne Alla Vodka by Tammy Ruggeri
A classic dish perfect for any occasion! Check out Tammy’s recipe for Penne Alla Vodka:
1 can small tomato paste
1 can crushed tomatoes.
1 large onion
1 Pint Heavy Cream
½ cup pecorino romano
1 stick of salted butter
Crushed red pepper flakes, salt to taste.
1 tsp olive oil
1 lb. Penne
Vodka (optional) fill one small can of paste.
Direction:
In large pan place chopped onion and butter; sauté until onion is soft; add cream and pecorino Romano cheese; put on low simmer.
At the same time in a smaller pot add olive oil, tomato paste and crushed tomatoes; add crushed pepper and salt to taste. Bring to a boil, then reduce to a simmer for about 10 minutes. Add vodka.
Slowly add tomato sauce (from smaller pot) to larger pt with cream, onions, etc.
Simmer for 10 minutes,
While sauce simmers bring pot of water to a boil add penne and cook to your own liking, I prefer al dente. Combine the sauce with cooked penne.
Serve hot, add a sprinkle of pecorino Romano cheese.
